What exactly is a marinade?

A BBQ marinade is a mixture of ingredients that tenderize and deepen flavor while you wait. The main ingredient needs to be an acid such as wine, salt, alcohol, and even citrus juices. These make the meat fibers break down, resulting in increased tenderness. You also need to add an oil of your choice, this helps the flavor to penetrate deep into the meat. Spices and herbs round out the mix.

How do you marinate?

That’s the easy part. You will need your choice of meat, pricked with a fork to allow marinade to soak in, a shallow bowl with a lid, or a resealable bag big enough to hold the marinade and the meat. Put the meat in the container, then pour in the marinade. Seal, then let sit refrigerated for a few hours or even overnight. Now you are ready to cook however you choose. Remember to discard any remaining marinade.

A tasty BBQ marinade is :

1/2c oil (olive, salad)
1/4 c soy sauce
1 tsp garlic salt
1 tsp Worcestershire sauce
1 tsp black pepper

Combine all ingredients, let sit for about one hour. Add prepared meat and refrigerate for 1-6 hours. Grill as usual. Enjoy !

As a child, I moved almost every four years.  I started out in Louisiana but spent a few years in Nevada, Mississippi, Missouri, and Arkansas. In Missouri, I met Tisha, my best friend, and wife. We had a long distance relationship (eight hours apart) for two years before we married and moved to Nashville, TN. I finished university and studied Recording Industry Management.  After one year in Nashville, we moved to Louisiana. I worked for a church and a production company. This was my first taste of venue management. I loved working with all the people involved to put together a successful concert, play, or worship experience. After 18 months in Louisiana, we moved to Paris, France. We lived in Paris for three years teaching English to university students (Paris, tu me manques). January of 2011 I became a father and my life was forever changed. Being a father is still something that blows my mind.  When our three-year contract ended in Paris we moved back to America and entered the job market. Enter Nexus:  I have always dreamed of managing a venue but I also wanted to work with a non-profit that worked to better the community. When Mickey explained the Nexus vision I was hooked! Tisha, Judah and I are excited to be apart of the Nexus community. Come be a part of the Nexus story and write your own chapter.

Favorite Childhood Memory

Many families (I learned later in life) take trips and stay at the beach for a week. My family took camping trips and drove around the mountains for several days looking for something that caught our eye.  One summer my cousins, Jake and Jim, joined us for a family adventure. Jake was very concerned about his luggage. He borrowed a very fancy bag from his mother and was worried something would happen to the bag. One evening, after setting up the tent, we left to eat dinner. Upon returning, Jake concludes that his bag has been “stolen.” When we got back from dinner my mom asked our neighbors to take Jake’s bag to their campsite for a couple hours. Everyone held it together long enough for Jake to be in tears about his mother’s lost luggage. When we finally came clean Jake announced that in the morning all of our clothes would be in the lake!  Great times with family! I will never forget the best prank ever.

I was born and raised in NE Ohio. I’ve left a few times, but somehow always got pulled back in after a year or two- this place grows on you! I have been in the restaurant business since my first job as a busboy at Spanish Tavern in Broadview Heights (flash to the past for some) and simply worked my way up the line. I had the pleasure of being mentored by my best friend Chef Patrick Kunkel – we opened Saucy Bistro and Lefever’stogether before I went on my own as executive chef at Vaccaro’s Trattoria.

When my twin girls were born I took a break from the restaurant business and have spent the past few years working at the Cleveland Clinic and volunteering a huge amount of time working with youth and adults as I have served with local churches. While my heart to serve people had been satisfied through that, I felt a part of me was missing out by not cooking more regularly. Out of that, Nexus is born – a place where all of me can serve the city I love!

Favorite Childhood Memory

I have a ton! While some had awkward middle school and high school years, I have to be honest in saying mine rocked! I had some of the best friends in the world. To keep it more childhood related, I will remember in middle school there was a semester I did not do so well in English and had failed (don’t tell my kids). I didn’t want to go home so I went to my friend Josh’s house where we listened to the newly released Beastie Boys album (Rock Hall again!). Maybe a simple memory – but it was great just hanging out and avoiding my parent’s wrath!

Passion/ Hope for Cleveland

One of my main passions is to see people become all they were created to be. I love to see when people find their personal mission in life and then come alive as they realize their own talents, joys, and purposes can come together harmoniously to fulfill that mission. For me that is Nexus – it is a combination of friends, food, and service – I think as others learn to harness their gifts we can see a major change in our city as we all live to serve each other.
