Menu Infused With Local Ingredients From Chef Mickey

Writing a menu has always been one of my favorite things to do. Throughout my career, I’ve been privileged enough to work with mentors who had an eye for how ingredients work together and were able to showcase them in innovative and creative fashions – without losing the purity of their individual flavors. Now that I’m working with farmers and artisans who take enormous pride in their products, I feel my responsibility to display that excellence is even greater.

Below are menu concepts for Nexus Café & Coffeehouse. I combined the comfort of flavors we all know and love with some new twists that I’m sure will dance across your pallet. The menu can be expected to significantly change with each passing season as new ingredients are available, and also on a daily basis depending on the availability of local, farm-fresh products.

Grilled Flatbread Pizzas

Made with local organically grown, stone ground whole wheat flour. Grilled over open flame then topped and finished in the oven.
